Ombar makes chocolate the way it should be - starting with the finest unroasted Ecuadorian cacao from smallholder cooperatives and building outwards from there. No roasting, no refined sugar, no dairy, no artificial anything. Just great ingredients treated with care in their small Cambridge factory.
The 70g range covers a lot of ground. On one end you've got the pure dark bars - 100%, 90% and 72% cacao, made with minimal ingredients and big flavour. In the middle, the Salt & Nibs adds texture with fruity cacao nibs and a touch of Kalahari desert salt. The Oat M'lk bars (Smooth & Creamy and Hazelnut) use British-grown naked oats for a creamy, dairy-free take on milk chocolate with half the carbon footprint of the real thing. The Centres variants are filled bars - a coconut & vanilla or pistachio cream centre encased in 60% dark chocolate. And then there's the Blonde - a completely different beast, made from coconut and cocoa butter with caramelised sugar and Madagascan vanilla. No cacao at all, just a dreamy, dairy-free answer to white chocolate.

What is the Blonde bar? Is it a white chocolate?
The Blonde is Ombar's dairy-free answer to white chocolate - inspired by nostalgic bars like Caramac. It's made from organic desiccated coconut and fair trade cocoa butter (which is derived from cacao but contains none of the cocoa solids that give chocolate its dark colour or flavour). It's sweetened with caramelised sugar, pure cane juice and a good hit of Madagascan bourbon vanilla. Incredibly creamy, very moreish, and about 50% less sugar than traditional white chocolate thanks to the chicory root fibre.
What is special about the 72% bar compared to the 90% and 100%?
The 72% has one extra ingredient that the others don't - Lactobacillus Acidophilus, a live probiotic culture. This gives it a subtly different flavour profile (floral, jasmine-like notes according to Ombar) and adds a potential gut health benefit on top of the usual cacao goodness. It's also a bit sweeter and more approachable than the 90%.
What is the difference between the Centres bars and the solid dark bars?
The Centres variants - Coconut & Vanilla and Pistachio - are filled bars with a soft centre inside a 60% dark chocolate shell. The solid dark bars (100%, 90%, 72%, Salt & Nibs) are single-texture throughout. Both use the same 60% base chocolate as the shell.
Are the Oat M'lk bars gluten-free?
Ombar uses gluten-free certified naked oats in their Oat M'lk bars, so they are suitable for most people avoiding gluten. If you have coeliac disease, check with your healthcare professional as individual sensitivity to even certified gluten-free oats can vary.
Why does Ombar keep cacao unroasted?
Roasting cacao at high temperatures can damage many of the naturally occurring polyphenols and flavanols in the bean - compounds associated with antioxidant activity and cardiovascular health. By keeping temperatures low throughout processing, Ombar preserves more of those compounds than most conventional chocolate makers. It also helps develop a more complex, less bitter flavour.
Is Ombar chocolate sustainable?
Yes, on multiple fronts. Ombar sources cacao directly from farmer cooperatives in Ecuador, paying above fair trade rates and employing their own on-the-ground representative to manage sourcing responsibly. The Oat M'lk range uses British-grown oats from farms near their Cambridge factory, reducing food miles and producing half the carbon emissions of conventional milk chocolate. Packaging is plastic-free and recyclable (outer paper layer). And for every Oat M'lk bar sold, 3p goes to reforestation in the Choco rainforest in Ecuador.
How should I store Ombar chocolate?
Below 20°C in a cool, dry spot - not in the fridge if you can avoid it, as the cold can suppress the flavour. Shelf life is 12 months for most bars; 9 months for Centres Pistachio. Store upright away from strong smells as chocolate can absorb odours.
