Simple, small-batch sea salt blends made by hand in Suffolk. Two ingredients each, no fillers, and a jar that will quietly improve almost everything you cook.
Pinches Provisions was started in late 2022 by Jan and Kate, a mother and daughter team based at Walsham le Willows near Bury St Edmunds. Jan still makes every single product by hand at home, in small batches, which is why the flavours are so much brighter than a supermarket jar.
These are finishing salts rather than cooking salts. Use them at the end, where you can actually taste them.
Zesty and sharp, made with natural sea salt and a big dose of dried lemon peel. Gorgeous on white fish, excellent on roast potatoes, and it lifts a plain green salad in seconds. Also very good on the rim of a glass if you are that way inclined.
Natural sea salt with a generous amount of dried red chilli flakes. Properly spicy rather than a token pinch of heat. Try it on eggs, corn on the cob, roasted cauliflower, or anything coming off a barbecue.
Heady and aromatic, made with sea salt and plenty of fragrant dried rosemary. The obvious partner for lamb, roast potatoes and focaccia, and it works beautifully rubbed into chicken skin before roasting.
Sprinkle over food as it comes off the heat, or scatter across a finished dish at the table. Because there are no anti-caking agents, the salt can clump slightly in humid weather. Give the jar a shake and it will loosen straight up. Keep in a cool dry place to protect the flavour.
Lemon Salt: Sea salt, dried lemon peel.
Chilli Salt: Sea salt, dried red chilli flakes.
Rosemary Salt: Sea salt, dried rosemary.
None of the three salts contain allergenic ingredients.
However, all Pinches products are made in a home kitchen that handles known allergens, so they are not suitable for anyone with an allergy to celery, cereals containing gluten (including wheat, barley and oats), crustaceans, eggs, fish, lupin, milk, molluscs, mustard, peanuts, sesame, soybeans, sulphur dioxide and sulphites or tree nuts.
Are Pinches salts vegan?
Yes. All three are suitable for vegans and contain nothing but sea salt and a dried flavouring.
Is there anything else in the jar?
No. There are no fillers, bulking agents or anti-caking agents, which is unusual for flavoured salts and the reason the flavour is so pronounced.
Which one should I start with?
Rosemary is the most versatile if you do a lot of roasting. Chilli is the one people come back for. Lemon is the best of the three with fish and salads.
How long does a jar last?
A 50g jar goes a long way as a finishing salt. Kept somewhere cool and dry with the lid on, it will hold its flavour for months.
