Herby, garlicky chimichurri made with extra virgin olive oil and fresh parsley, in three heat levels.
This authentic South American chimichurri from Chimi Love is built on extra virgin olive oil, parsley, shallots and apple vinegar, with garlic, oregano, green jalapeños and chilli flakes. It's intense, fresh and punchy - more like a loose salsa than a heavy sauce. The three heat levels use the same core ingredients in different proportions, so the herby, vinegary character stays the same whichever you pick.
Use it as a marinade, spoon it over grilled veg, steak or fish, swirl through roasted potatoes or stir a little into mayo or yogurt for an instant herby dip.
Mild - parsley leads, with green jalapeños and chilli flakes right at the end of the list. Herby and garlicky with barely any heat. The one for the table.
Medium - green jalapeños move up to second place. A clear, steady warmth that still lets the herbs through. The everyday choice.
Hot - same as the medium but with the chilli flakes pushed well up the list. Noticeably hotter, and the one to reach for if you want the sauce to bite back.

What is chimichurri?
An Argentinian herb sauce, traditionally served with grilled meat. It is loose and oily rather than thick, built on parsley, garlic, oregano and vinegar, and it works as a marinade, a dressing and a finishing sauce.
Which heat level should I pick?
Mild if you want the herbs and garlic without much chilli, medium for a steady warmth that suits most things, hot if you like a proper kick. All three taste like the same sauce underneath.
Is it vegan?
Yes. All three are plant-based, with no animal ingredients.
What do I use it on?
Steak is the classic, but it is just as good on grilled or roasted vegetables, fish, halloumi, roast potatoes, eggs and grain bowls. Stir a spoonful into mayonnaise or yogurt for a quick dip.
